Lemon Snow Pudding
3 tbsp cornstarch
1 cp sugar
grated rind of 1 lemon
juice of 1 lemon
2 eggs, separated
1/4 tsp salt
1 3/4 cps water
1 - Mix together cornstarch and sugar.
2 - Add grated lemon rind and lemon juice.
3 - Beat egg yolks slightly and add to first mixture.
4 - Add salt and water.
5 - Bring to a boil, stirring constantly until thickened
6 - Simmer gently for 5 minutes, OR cook over hot water in
double boiler for 40 minutes stirring occasionally.
7 - Then slowly pour over well beaten egg whites, folding gently,
or leave the mixer on slowest setting until all custard is folded in well
8 - Chill. This may also be used as a filling in a graham cracker pie crust.
