Eggs Poached inGolden Mush
2 cps boiling water
1 cp cold water
1 cp yellow corn meal
1 tsp salt
3 tbsp shortening
1 - Mix cold water and corn meal and stir immediately into the boiling water.
2 - Add salt and let cook on simmer heat for 30 minutes.
3 - Pour into a shallow pan that has been rinsed in cold water.
4 - Mush should be about 3/4" thick. Let stand overnight.
5 - Cut into 3 1/2" rounds with a cookie cutter.
6 - Heat shortening in a large skillet.
7 - Brown mush on one side, turn over and with a spoon,
make a hollow in the center of each round.
8 - Break an egg into each hollow.\ 9 - Salt and pepper, then put a tight fitting cover on the skillet. 10 - Cook until eggs are firm. (about 5 minutes) Serves 6
