Oat Fish Cakes
2 1/2 cps boiling water
1 1/2 tsp salt
1 1/2 cps uncooked oatmeal
1/4 tsp. black pepper
1 lb can pink salmon, undrained
1/3 cp yellow corn meal
5 tbsp shortening for frying
1 - Add oatmeal and salt to boiling water.
2 - Cook slowly, stirring often.
3 - Whenn oatmeal is very stiff, remove from heat.
4 - Cool and add salmon and pepper.
5 - Mix with a fork until salmon is flaked and bones mashed.
6 - Shape into 10 large cakes.
7 - Dip in corn meal and let stand 15 minutes.
8 - Fry in shallow, hot shortening until brown on both sides.
