Casserole of Pork Liver with Onions
5 slices bacon
3 cps boiling water
1 lb pork liver, sliced thin
3 cps sliced onions
1 1/2 tsp salt
1/2 cp hot water
1 - Fry bacon until crisp.
2 - Pour boiling water over the liver, drain, and dry.
3 - Dredge with well seasoned all-purpose enriched flour
and saute' in hot bacon fat.
4 - Cook about 10 minutes. Arrange liver in casserole.
5 - Cover with onions. Sprinkle with salt and pepper
6 - Add hot water. Crumble bacon over top.
7 - Cover tightly. Bake at 425 degrees for 50 - 60 minutes.
