Leftover Meat-Corn Ring with Vegetables
1 1/2 cp plus 2 tbsp all-purpose enriched flour
3/4 cp corn meal
3 tsp baking powder
1/2 tsp salt
2 tbsp sugar
1/2 cps diced cooked meat
1 egg, well beaten
1 cp milk
1/4 cp melted shortening
2 cps leftover or freshly cooked vegetables
4 tbsp butter or fortified margerine
4 tbsp flour
1 tsp salt
1/8 tsp pepper
2 cps milk
1 cp grated cheese
1 - Sift flour, corn meal, baking powder, salt, and sugar together.
2 - Add meat, egg, milk, and melted shortening. Stir only until mixed
3 - Pour into a well oiled or greased 8" ring mold.
4 - Bake for 30 minutes in preheated 400 degree oven.
5 - (if the ring doesn't come right out of the mold let it set 5 minutes.)
6 - Turn out on platter and fill center with vegetables and sauce.
7 - Any kind of leftover meat may be used.
8 - (If fresh hamburg is used, brown it first.
