Beef Roast American Style
4 lbs beef(this can be a chuck or shoulder cut of beef)
Salt, pepper, and all-purpose enriched flour
2-inch cube salt pork
1/2 cp hot water
Carrots, potatoes, onions
1 - Fry out the cubed salt pork in a skillet
2 - Use medium heat on an electric range so as not to scorch the pork.
3 - Rub meat with mixture of flour, salt, and pepper.
4 - When there is sufficient grease in the skillet, put meat in
and brown on all sides.
5 - If using an electric range, place meat in deep well cooker, add 1/2 cp water,
set switch to high until steaming, then turn to low.
6 - For other type of range, the meat may be placed in a large covered kettle
and cooked on surface, or cooked in a 250 degree oven in a covered casserole.
7 - Add salted vegetables and roast 1 hour before ready to serve.
8 - In an electric range turn switch to high when vegetables are added, and when
steaming again, finish cooking on low. 9 - When cooking on range other than electric, it may be necessary to add water
to prevent burning.
Delicious gravy can be made from the liquid left in the kettle.
