Smothered Veal Chops
8 veal chops, 1 1/2 lbs
2 beaten eggs
3/4 cp cracker crumbs
7 tbsp fat
2 medium sized onions, chopped
1 1/2 cps canned tomatoes
1 tsp salt
1/4 tsp pepper
1 - Roll the veal chops in the cracker crumbs, then dip into the beaten eggs.
2 - Heat fat in skillet and season.
3 - Brown the chops on both sides, then place in a greased casserole.
4 - Add the chopped onions,salt, pepper and tomatoes.
5 - Cover and bake 45 minutes in a 375 degree oven.
