Veal with Dressing
2 lbs leg of veal, cut 1/2 inch thick
3 tbsp shortening
All purpose enriched flour, salt and pepper.
1/3 cp water
1 - Dredge meat with flour. Season with salt and pepper.
2 - Brown on both sides in skillet with hot shortening.
3 - Add 1/3 cp water to frying left in skillet, bring to a boil.
4 - Place dressing in bottom of 1 1/2 x 6 1/2 x 2" utility dish.
5 - Pour fryings over the dressing.
6 - Cover with meat.
7 - Bake in preheated 375 degree oven for 1 hour.
1 cp bread cubes
1/3 cp chopped celery
1/4 cp chopped onions
2 tbsp chopped parsley
1 tbsp salt
1/8 tsp pepper
1/4 cp shortening
Combine the crumbs, parsley, salt and pepper.
Meanwhile, melt the shortening in a frying pan.
Add onion and celery then simmer gently until tender.
Mix with seasoned bread cubes.
(If dry bread is used, more moisture should be added.)
