Stuffed Tomato Salad
3/4 cp diced cucumber
1/2 cp diced cooked chicken
1/4 cp chopped nut meats
1/2 cp mayonnaise dressing
1/2 tsp salt
1/8 tsp pepper
1 - Select medium size smooth tomatoes.
2 - Scald, peel and chill.
3 - Cut tomatoes down from top about 1 inch forming a tomato rose of about 6 petals.
4 - Mix all other ingredients except the lettuce.
5 - Push petals open gently, so as not to break tomato apart.
6 - Fill the cavity with the chicken mixture.
7 - Arrange on lettuce.
8 - Garnish with more mayonnaise and sliced, stuffed olives.
To Prepare Tomatoes for Stuffing
Choose medium size, smooth tomatoes. Scald, remove skin.
Cut a slice from top and remove some of the pulp.
Sprinkle inside with salt, invert, and let stand thirty minutes to chill.
Fill with Cole Slaw, cottage cheese, or other desired combinations.
Serve on salad greens.
