Creamed Green Lima Beans
For a family of five, buy about 3 lbs of lima beans.
It is best to shell the lima beans just before cooking them.
However, if it is necessary t shell the beans in advance,
place them in a covered utensil wuch as a fruit jar and store
in the refrigerator until ready to use.
Do not allow the shelled beans to remain in a warm room,
or the vitamins are lost.
Place the shelled beans, 1/4 cp of water and seasoning in a covered utensil.
Bring to a boil quickly, then turn the heat to simmer or to a low flame.
Steam for 30 minutes.
Stir in 1 cp of white sauce.
2 tbsp butter or fortified margerine
1 tbsp all-purpose enriched flour
1 cp milk
1/2 tsp salt
Stir flour into melted butter or margerine.
Gradually pour in the milk and stir until thick.
Combine with the lima beans.
