2 cps cooked soybeans
1/4 cp diced salt pork
2 cps chopped celery
2 tbsp chopped onion
2 tbsp chopped green pepper
1/3 cp all-purpose enriched flour
2 cps milk
2 tsp salt
1/8 tsp pepper
1/2 cp dry bread crumbs
2 tbsp butter or fortified margerine
1 - Brown salt pork in skillet
2 - Add celery, onion and green pepper.
3 - Saute' 5 minutes.
4 - Add flour and blend in well
5 - Stir in the milk and salt and pepper.
6 - Let it cook until thick. Add beans.
7 - Mix well and pour into a greased casserole.
8 - Cover with the crumbs that have been blended with the butter or margerine.
9 - Bake for 30 minutes in a preheated 350 degree oven. Serves 6
