4 cps onions, sliced thin
2 tbsp butter or fortified margerine
2 tbsp all-purpose enriched flour
1/2 tsp salt
1/8 tsp pepper
1 cp milk
1/4 cp grated cheese
1/4 cp liquid drained from onions
1 - Cook onions in 1/2 cp water.
2 - Melt butter or margerine in another saucepan.
3 - Add flour, salt, pepper, mix until smooth.
4 - Gradually add milk and cook until thick.
5 - Add liquid from onions, and cheese, stirring
until cheese is melted,
6 - Pour sauce over onions and serve immediately.
7 - With any range other than electric, it is advisable
to use double boiler for making a white sauce.
