Buckwheat Griddle Cakes
2 cps buckwheat flour
1 1/2 tsp salt
4 tsp baking powder
6 tbsp shortening
1 tbsp molasses
2 1/4 cps milk
1 - Cut shortening into blended dry ingredients.
2 - Combine the slightly beaten yolks with molasses andn milk.
3 - add, mixing just enough to moisten.
4 - Fold in stiffly beaten whites and bake on griddle.
5 - Serve with butter or fortified margerine and maple syrup.
Makes 18 cakes
