Lemon Molasses Cookies
2 cps all-purpose enriched flour
2 tsp baking powder
1/2 tsp soda
1 1/2 tsp cinnamon
1/4 tsp salt
1/2 cp milk
1/2 cp shortening(half butter and half fortified amrgerine mayn be used if desired)
1/2 cp granulated sugar
1 egg, well beaten
1/2 cp baking molasses
1 tbsp grated lemon rind
1 - Cream sugar and shortening in medium size mixing bowl.
If using and electric mixer, follow the ususal procedure for blending sugar and shortening together.
2 - Add well beaten egg, then molasses and beat vigorously.
3 - Sift four, measure, then resift with baking powder, soda,
cinnamon, and salt.
4 - Add alternately with milk, beating briskly after each addition.
5 - Add lemon rind.
6 - Fill the greased, floured muffin pans half full.
7 - Bake 1/2 hour in preheated 350 degree oven.
Makes 15-20 cupcakes.
Note: All purpose flour is indicated as such on bags. Same type as used
in making bread.
