1 tbsp butter or fortified margerine
1/2 lb soft cheese, grated or cut in small pieces
1/2 cp evaporated milk
few grains cat=yenne
salt and pepper to taste
1 - Melt butter or margerine on high heat, add cheese and seasonings and turn to low heat.
2 - As cheese melts, add milk gradually, stirring constantly.
3 - Add slightly beaten egg.
4 - Two tbsp of tomato soup added just before serving improves flavor and color.
5 - Serve on toast squares or toasted crackers.
