Scrambled Eggs with Carrots and Toasted Bread Cubes
5 tbsp butter or fortified margerine
3/4 cp soft cubed bread
1/8 tsp pepper
6 tbsp milk
3/4 cp carrots, grated very fine
1 tsp salt
1 - Melt butter or margerine in large skillet and saute' bread
cubes in it until browned.
2 - Remove to platter.
3 - Beat eggs, add milk. carrots, salt and pepper and pour into frying pan.
4 - Cook on low heat. Stir constantly.
5 - Turn onto platter and garnish with bread cubes and parsley Serves 5
