Creamed Salmon with Toasted Bread Casserole
2 1/2 cps medium white sauce
1 large can salmon
3 slices of enriched white bread
4 tbsp butter or fortified margerine
4 tbsp all-purpose enriched white flour
2 1/2 cps milk
1 tsp salt
1/8 tsp pepper
1 - Remove bones and skin of salmon, break into small pieces.
2 - Grease utility dish, size 10" x 6" and pour half the white sauce in it.
3 - Arrange salmon to cover white sauce, then pour the remaining white sauce over the salmon.
4 - Cut bread into wedges, butter on one side and af]rrange bread with butter side up,
on the white sauce.
5 - Bake until nicely browned.
6 - Leftover vegetables or sliced hard-cooked eggs may be added to extend this dish.
7 - Bake in preheated 400 degree oven for 15 minutes
