Macaroni or Spaghetti and Cheese
1/2 lb spaghetti or macaroni, broken into small pieces
2 1/2 cps milk
2 tbsp all-purpose enriched flour
3 tbsp fat
1/2 lb cheese, grated or cut into small pieces
1 - Drop macaroni or spaghetti into boiling, salted water.
2 - Cook rapidly at medium heat for 25 minutes.
3 - Meanwhile make a shite sauce of the fat, flour and milk.
4 - Remove from the range, add grated cheese and stir until melted.
5 - Drain macaroni into sieve and pour boiling water through it.
6 - Place in a greased casserole and pour the cheese sauce over it.
7 - Bake 1 hour at 350 degrees.
8 - For a deliciously different flavor, add 1/2 cp finely chopped leeks, or fresh spring onions to the cheese sauce.
