Spaghetti Chicken Casserole
1/4 cp chicken fat or shortening
1/4 cp chopped onion
1/4 cp all-purpose enriched flour
2 cps chicken stock
salt and pepper
1 cp grated cheese
1 cp canned tomatoes
2 cps diced chicken
1 8-oz pkg of cooked spaghetti
1/2 cp buttered bread crumbs
1 - Melt fat and cook onions slowly for 10 minutes.
2 - Add flour, stir well, and add stock, stirring constantly until thickened.
3 - Add salt and pepper to taste.
4 - Add cheese and stir until melted.
5 - Add tomatoes and chicken.
6 - Place chicken mixture and spaghetti alternately in greased casserole.
7 - Cover with buttered bread crumbs.
8 - Bake for 25 minutes in a preheated 375 degree oven.
