Beef and Rice Casserole
4 tbsp chopped onion
4 tbsp chopped green pepper
3 tbsp shortening
1 lb ground beef
2 tsp salt
1/2 tsp pepper
4 tbsp unsifted all-purpose enriched flour
1 tsp Worcestershire sauce
1 3/4 cps milk
2 cps cooked rice
1 1/4 cps cooked or canned tomatoes or 2 3/4 cps milk
1 cp buttered soft bread crumbs
1 - Cook onion and green pepper in the shortening until tender.
2 - Add beef and add 1 tsp salt and 1/4 tsp pepper.
3 - Fry until brown, stirring frequently.
4 - Add the flour and Worcestershire sauce, mix lightly.
5 - Add milk and stir costantly until thickened.
6 - Pour 1/2 of this mixture into a greased 3 qt. casserole,
cover with rice and spread the tomatoes and 1 tsp salt and
1/4 tsp pepper over rice.
7 - Pour the remaining beef mixture in and cover with buttered bread crumbs.
8 - If milk is used in place of tomatoes, add additional milk to the
onin, pepper, and flour mixture.
9 - Bake in preheated 375 degree oven for 30 minutes.
