Pork Chops and Rice
6 pork chops
1/2 cp uncooked rice
3 3/4 cps strained tomatoes
3 tbsp chopped green pepper
3 tbsp chopped onion
2 tsp salt
1/4 tsp pspper
2 tbsp shortening
1 - Salt and pepper pork chops and roll in flour.
2 - Melt shortening in skillet on high heat, and brown chops on both sides.
3 - Mix together the uncooked rice, tomatoes, salt, pepper, onions and green
pepper and pour over the chops.
4 - Place lid ojn skillet.
5 - When steam escapes freely from vent in cover, reduce heat.
