Green tomato Mince Meat Pie
1 peck green tomatoes
1 qt sliced apples, fresh or dried
1 lb seedless raisins
1 lb suet, chopped
cinnamon, nutmeg and cloves
2 1/2 lbs brown sugar
1 - Wash tomatoes. Cut in small pieces. Sprinkle with salt
2 - Let stand overnight. Drain. Add sufficient water to prevent sticking.
3 - Cook 30 minutes, stirring frequently.
4 - Add lemon juice, grated rind of 1 lemon and white of 1 lemon cut
in small pieces.
5 - Add apples, suet, raisins and sugar.
6 - Add spices to taste and a few grains of salt.
7 - Simmer slowly, stirring frequently, until tomatoes and apples
are tender and flavors are blended.
8 - Pack in freshly sterilized jars. Seal.
9 - Bake in a double crust pie.
