Cream Soup of Leftover Beans
1/4 cp cooked beans, dried or fresh
1/2 tbsp fat
2 tbsp all-purpose enriched flour
1 cp milk
1 tsp finely chopped onion
2 tsp finely chopped, cooked carrot
1/4 tsp salt
Dash of pepper
1 - Rub the beans through a sieve.
2 - Melt fat, add flour, mix until smooth.
3 - Add milk slowly stirring constantly
4 - When boiling, add bean pulp, onion and carrot.
5 - Add salt and pepper.
6 - Allow to seimmer a few minutes.
