Baked Carrot Ring
1 1/2 cps diced cooked carrots
1 1/2 cp canned or cooked peas
1/4 cp finely chopped onion
1 1/2 tbsp melted shortening
3 eggs, well beaten
1 1/2 cps soft bread crumbs
1 cp evaporated milk
1/2 cp water or liquid from vegetables
1 1/2 tsp salt 1/8 tsp pepper
1 - Combine all ingredients in the order given
2 - Pour into a well greased utility dish or baking pan,
and set in a pan of water.
3 - Bake 50-60 minutes in 350 degree oven, or until
knife inserted in center comes out clean.
4 - Mushroom sauce is very good served over this and
makes a very good meatless dinner dish.
5 - Or, serve it with tomato sauce.
May also be made in loaf form.
NOTE: 1 1/2 cps cooked turnips and 2 tbsp chopped parsley
may be used in place of the peas.
