Baked Cheese Cake
1 pt. creamed cottage cheese
2 tbsp soya flour
1/2 cp sugar
1/4 tsp salt
2 eggs, separated
1/4 cp milk
1 tsp grated lemon rind 3 tbsp lemon juice
pastry lined pan
1 - If cottage cheese is coarse, force through a fine sieve.
otherwise a little beating in the mixer is sufficient
2 - Add flour, half the sugar, salt, and egg yolks. Mix well.
3 - Stir in milk, lemon rind and juice.
4 - Beat egg whites until foamy, gradually add the remaining sugar;
beat until very stiff, fold into the cheese mixture, pour into
pastry lined pan, 11 x 7 x 2".
5 - Bake at 400 degrees for 15 minutes at 400 degrees, then
at 325 degrees for 45 minutes. 6 - Serve warm or cold.
