Queen of Rice Pudding
1 1/2 qts milk
1 cp rice, washed
1 cp sugar or 1/2 cp of sugar and 1/2 cp corn syrup
1 tsp salt
1 cp raisins
grated rind of 1 lemon
2 eggs, well beaten
1/8 tsp nutmeg
1 - Heat milk to scalding on high heat.
2 - Add rice, sweetening and salt, stir well and turn to simmer.
3 - Cook on simmer for 45 minutes, then add washed raisins and lemon rind.
4 - Continue to simmer for 15 minutes longer.
5 - Pour some of the rice pudding over the beaten eggs, stirring
well, then pour egg mixture back in the pudding pan and cook 2 minutes longer.
6 - Add nutmeg and cool.
7 - Total cooking time 1 hour.
