Meat Ball Stew
1 lb ground beef
1 tsp salt
1/4 tsp pepper
1 tbsp shortening
1 cp sliced onions,
2 cps boiling water
2 cps sliced potatoes
2 cps sliced carrots
3 tbsp all-purpose enriched flour
1 cp milk
1 1/2 tsp salt
1/8 tsp pepper
1 - Season beef with 1 tsp salt and 1/4 tsp pepper and form into 18 small balls.
2 - Fry in shortening until brown on all sides.
3 - Add the onions and water.
4 - Cover and cook 20 minutes.
5 - Add the potatoes, carrots and 1 1/2 tsp salt and 1/8 tsp pepper.
6 - Cover and continue cooking over low heat for 20 minutes more.
7 - Mix the flour to a smooth paste with part of the milk, then gradually
add the rest of it.
8 - Add to the beef and vegetable mixture and cook, stirring constantly until thick.
Serve garnished with chopped parsley.
