1 1/2 cps buttermilk
3 1/2 tbsp cornstarch
1/2 cp sugar
3/4 cp light corn syrup
2 egg yolks
1/4 cp lemon juice
3 tsp grated lemon rind
1 tbsp butter or fortified margerine
1 - Heat milk. When hot, add the cornstarch, sugar, and cornsyrup
which have been well blended.
2 - Cook until the mixture is thick, stirring constantly.
3 - Beat egg yolks, add a small amount of the custard to the egg yolks.
4 - Mix well and return to the custard, cook 2 minutes longer.
5 - Remove from heat and add lemon juice, lemon rind, and butter or margerine.
2 unbeaten egg whites
1/2 cp light corn syrup.
Beat egg whites and corn syrup until it holds its shape.
Pile on pie and bake in preheated 325 degree oven for 15 minutes.
