Yams, Quick Candied
4 large yams
2 tbsp shortening
1 tbsp butter or fortified margerine
1/2 cp dark corn syrup
1 - Peel yams and slice crosswise in 1/4-inch slices.
2 - Heat buter or fortified margerine and shortening in a skillet
and lightly brown sliced yams in the hot shortening.
3 - When all the slices are browned, sprinkle with salt, pile
slices all into the skillet and pour the corn syrup over the yams.
4 - Cover tightly and cook on low heat for 10 minutes.
