Dressing for 15-18 Pound Turkey
2 lbs bread, (21 cps measured after cubing
1 cp celery, finely chopped
2 medium sized onions, finely chopped
the giblets, finely chopped (heart, liver, gizzard)
1 tbsp salt
1 tbsp poultry seasoning
1/2 tsp pepper
1 tsp sage
3 beaten eggs
1 cp liquid from cooking giblets
1/2 cp melted butter or fortified margerine
1 - For a 15-18 pound turkey approximately 2 pounds of bread
is needed for stuffing. 2 - For a 10 lb turkey, use approximately 1 3/4 pounds bread.
3 - Cook giblets, then grind and chop fine.
4 - Slowly simmer celery and onins in melted fat.
5 - Cube the bread and add salt, poultry seasoning and sage.
6 - Add to celery and onions.
7 - Then add the liquid and gently fold into dressing.
