Spicy Oatmeal Raisin Pudding
1 cp sifted all-purpose enriched flour
3/4 tsp salt
3/4 cp sugar
1 1/8 tsp soda
1 tsp cinnamon
1 cp uncooked oatmeal
3/4 cp chopped dates or raisins
1 1/8 cps sour milk OR buttermilk
3 tbsp shortening
1 1/2 tsp vanilla
1 - Sift flour, sugar, salt, soda, and cinnamon together.
2 - Add oatmeal and dates or raisins.
3 - Add melted shortening to buttermilk and add to the dry ingredients.
4 - Pour into well greased pudding pan and cook in deep well cooker.
5 - Steam in large Kettle if you do not have a deep well cooker.
6 - Add 1 cp water to kettle or cooker.
High heat 15 minutes, low, 1 hour. Total time 1 hr 15 minutes.
Serve with Lemon Sauce given below or Butterscotch Sauce(given elsewhere)
2/3 cp light corn syrup
5 tsp cornstarch
1 cp boiling water
2 tbsp lemon juice
2 tsp butter or fortified margerine.
1 - Pare lemon thinly. Steep parings in boiling water.
2 - Mix together the corn syrup and cornstarch and add water in which
the lemon rind has been steeped.
3 - Cook on low heat until thickened.
4 - Add lemon juice and butter or margerine.
