1 lb boneless veal
2 tsp salt
A few celery leaves
6 whole black peppercorns
3 hard-cooked eggs
2 tbsp all-purpose enriched flour
1/2 cp top milk
1/8 tsp mace
Dash of cayenne
Salt to taste
2 tbsp sherry (optional)
6 tbsp soya flour
1 - Cover veal with 1 3/4 cps water
2 - Add salt, onion, celery leaves and peppercorns.
3 - Simmer covered until meat is tender.
4 - Remove celery leaves and peppercorns
5 - Cut meat into strips. Make thickening of soya and
white flour and stir into meat.
6 - Add mace, cayenne and salt to taste.
7 - Press egg yolks through a fine sieve. and cut
egg whites length-wise, and add to the meat. Cook until thickened.
8 - Add sherry if desired, and serve on steamed rice.
