California Apple Butter
Source: Vintage Recipes from Old Time Pickling and Spicing Recipes - Florence Brobeck (c. 1953)
2 cps dried apples
2 1/2 cps water
1 cp sugar
1/2 tsp powdered cinnmon
1/4 tsp powdered allspice
1 - Rinse apples, drain, add water and cook, covered, 20 to 30 minutes, or until apples are tender.
2 - Force through sieve to remove any bits of skin or core.
3 - Add sugar and spicews to pulp.
4 - Cover and cook slowly, 20 to 30 minutes longer, or until desired consistency.
5 - Seal at once in sterile glass jars.
Makes 1 to 1 1/2 pints
