6 large (6-inch) cucumbers
1 medium-sized onion, peeled and grated
3/4 tsp freshly-ground pepper
1 tsp salt
1 cp cider vinegar(about)
1 - Wash cucumbers, drain, cover with cold wqater, and let stand 1 to 2 hours.
2 - Drain, pare, grate or grind as fine as possible into bowl or glass jar.
3 - Add remaining ingredients with just enough vinegar to make a smooth consistency.
4 - Mash, mix well and press through sieve.
5 - Keep in covered quart jar in refrigerator.
Makes about 2 pints
Add to salad dressing or serve with cold cuts.
