Pickled and spiced fruits are so widely
popular today that any homemaker is tempted to try her
hand at producing a few jars for the winter menus. Many
or the long-established recipes were developed in this coun-
try from old English concoctions. The gardens, orchards,
plentiful spices, sugar, and cider vinegar of American farms
have always encouraged country housekeepers to vary the
old recipes, to create new ones, and to develop delicious
combinations which often took prizes at local state fairs.
