Spiced Pear Chips

2 lbs ripe bartlett pears
2 cps sugar
2 tbsp chopped preserved or candied ginger
1 lemon or 1 1/2 limes
1 - Wash pears; remove stems and blossom ends; peel, quarter, core, and slice thin into glass or china bowl.
2 - Add sugar and ginger.
3 - Cover and let stand overnight.
4 - In the morning grate the peel of lemon or limes over the pears.
5 - Cut the remaining white rind away from fruit, quarter and remove seeds.
6 - Add fruit to pears.
7 - Mix and cook in enamel or agate kettle slowly, abour 1 1/2 hours, or until the consistency of marmalade.
8 - Stir frequently.
9 - Pour into small sterile glass jars or jelly glasses.
