Gingered Tomato Preserves
Source: Vintage Recipes from Old Time Pickling and Spicing Recipes - Florence Brobeck (c. 1953)
2 qts small yellow or red cherry tomatoes
2 oz green ginger root, scraped and cut in pieces.
1 1/2 lemons, unpeeled, sliced thi9n, seeds removed
2 cps water
1 - Wash tomatoes and remove stems.
2 - KMeasure tomatoes, add 1 1/2 cps sugar for every quart of tomatoes.
3 - Combine ginger, lemons, and water; add to tomatoes and sugar; bring to boiling.
4 - Cover and cook slowly until tomatoes are transparent, about 1 hour.
5 - Uncover and let excess sirup cook down.
6 - Spoon into hot sterile glass jars; fill to overflowing; seal at once.
Makes 2 pints.
