Ohio Mint Relish
Source: Vintage Recipes from Old Time Pickling and Spicing Recipes - Florence Brobeck (c. 1953)
2 cps cider vinegar
2 cps sugar
1/2 tbsp dry mustard
2 large sweet apples, washed, cored and finely diced
1 medium-sized very ripe tomato, scalded, peeled, and chopped
1/2 cp finely-diced wqashed and peeled onion.
1/2 cp seedless raisins, soaked and drained
1/4 tsp salt
1 cp chopped, wahsed fresh mint leaves
1 - Scald finegar in an agate or enamel kettle, add sugar and mustard.
2 - Stir and remove from heat.
3 - Let cool slightly.
4 - Pour over remaining ingredients, mix, spoon into hot, sterile glass jars, and seal at once.
Makes 2 pints.
