Pickaway County (Ohio) Pepper Relish

12 large green peppers
6 sweet red peppers
5 large sweet Spanish onions, washed, peeled, and chopped fine
2 1/2 cps sugar
2 cps cider vinegar
1 1/2 tbsp salt
1 - Wash peppers, cut in strips; remove seeds and membrane.
2 - Put peppers through food grinder using medium blade.
3 - Cover with boiling water; let stand 5 minutes; drain well, pressing water out.
4 - Cover with boiling water again, let stand 15 minutes; drain thoroughly.
5 - Combine pepper sith chopped onions.
6 - Mix sugar, vinegar, and salt in agate or enamel kettle; heat to boiling.
7 - Add peppers and onions.
8 - Stir; bring to boiling; boil, uncovered, 20 minutes.
9 - Spoon into hot, sterile, glass jars and seal at once.
