To Make Your Own Wine Vinegars

For red wine vinegar, buy 1 quart claret. For white
wine vinegar, buy 1 quart sauterne. If you have the "mother"
from your last bottle of store vinegar, add that to the wine
bi=ottle. Cover the opening of the bi=ottle with cheesecloth. Set
the bottle away in a dark warmish place, such as kitchen
cupboard. Let stand all winter, or all summer, at least 4 months.
Good flavored vinegar results. Without the "mother from the
bought vinegar, let your wine stand at least 5 months--longer
if necessary. Taste to decide if it is sour enough.
