Candied Sweet Potatoes with Apricots
2 lbs peeled cooked sweet potatoes
1 cp drained apricots
1 tsp grated orange rind
1/4 cp melted butter
1 cp brown sugar, packed
1/4 cp liquid from apricots
1/4 cp chopped walnuts
1 - Heat oven to 375 degrees F.
2 - Cut sweet potatoes into thick slices and arrange layer in greased casserole dish.
3 - Cover with layer of apricots, sprinkle with some of the brown sugar.
4 - Repeat layers.
5 - Combine butter, apricot liquid and orange rind.
6 - Pour over layers.
7 - Bake uncovered for 45 minutes, basting once or twice with liquid in bottom of dish.
8 - Top with nuts the last 5 minutes.
