Apple Dessert Pancake
2 tbsp ganulate sugar
1 tsp ground cinnamon
2 tbsp butter or margerine
1 1/2 MacIntosh apples
3 tbsp all purpose flour
1/4 tsp double-acting baking powder
2 egg yolks
3 tbsp milk
2 egg whites beaten with 3 tbsp sugar
About 20 minutes before serving--combine 2 tbsp granulated sugar with 1 tsp cinnamon; set aside
1 - In 10 inch skillet, with metal handle, melt 2 tbsp butter or margerine, swirl over entire bottom of
skillet; then sprinkle cinnamon sugar mixture evenly over melted butter.
2 - Pare, core and slice the apples and arrange pieces in mixture in skillet.
3 - Cook over low heat about 5 minutes.
4 - Start heating oven to 400 degrees F.
5 - Combine 3 tbsp flour, 1/4 tsp double-acting baking powder, salt, egg yolks and 3 tbsp milk.
6 - Beat 2 egg whiteswith 3 tbsp granulated sugqaruntil they form soft peaks, add to flour mixture.
7 - Pour batter over apple pieces, spread evenly with q spatula.
8 - Bake 10 minutes or until golden and puffy.
9 - Remove from oven, loosen, invert plate over skillet then invert both; lift off skillet.
10 - Cut in 6 wedges--pass sour cream or vanilla ice cream.
