Party Egg Salad
1-3 oz pkg lemon Jello
1 cp hot water
1/2 cp cold water
2 tbsp vinegar
1/2 cp mayonnaise
2 tbsp chopped parsley
1/2 tsp salt
1/2 tsp curry or mustard
4 hard cooked eggs
1/2 cp diced celery
1/4 cp diced green pepper
1 - Dissolve gelatin in hot water; add cold water, vinegar, mayonnaise, salt and curry powder; beat well with
2 - Pour in freezing tray or metal loaf pan.
3 - Chill until firm about 1 inch from pan edge, but still soft in center (20 minutes in freezing unit)
4 - Beat with electric mixer until thick and fluffy.
5 - Fold in chopped eggs, celery, green pepper and parsley.
6 - Pour into 11 X 7 pan or dish.
7 - Chill in refrigerator until firm.
8 - Makes 4 to 6 servings.
9 - Can be chilled in individual molds.
